The wine-making
The ripe grapes were hand-picked into small crates at the end of September. After the grapes were destemmed they rested on the skins for several hours until they attained the classic onion-skin color; thereafter they were carefully pressed. The juice was cool fermented in stainless steel tanks at approxomately 18° Celsius so as to preserve the aromatic components. After resting in stainless steel for several months this fruity and aromatic wine was bottled early in Spring.
