The wine-making
The fully ripe grapes were hand-picked at the end of September. Then they were carefully destemmed and fermented for 6 to 8 days at 25 to 28° Celsius in special stainless steel tanks. During fermentation the mash was flooded with the must twice a day so as to extract optimum levels of fruit, color and extract. After malolactic fermentation this Zweigelt aged under ideal conditions in our 700 year-old natural cellar at a temperature of 11° Celsius. In the beginning of April of the year following the harvest this cuvée is put in bottle where it matures for several months.
