The wine-making
Fully ripe grapes of the three varieties were selectively hand-picked in the middle of October, thereafter destemmed and fermented for 10 to 12 days in stainless steel tanks at temperatures ranging from 25 to 28° Celsius. While the Pinot Noir contributes the refinement and fine structure typical of the variety, the Zweigelt-grapes furnish our classic Rotspon with deep ruby color, cherry-aromas and a full body. The Merlot finally makes this blend supple, harmonious and warm.
During fermentation the mash was flooded with the must once a day so as to extract ideal levels of fruit, color and extract. Upon completion of the alcoholic resp. malolactic fermentation this cuvée matured in two- to three-year-old barriques for a period of 12 months. Prior to bottling the wine was assembled in large oak barrels.
