The wine-making

Exclusively the best and healthiest grapes were harvested in mid-October, and then fermented for 14 days in stainless steel tanks at temperatures ranging from 25 to 28° Celsius. During fermentation the mash was flooded with the must once a day so as to extract maximum levels of fruit, color and extract. After the gentle extraction of the juice malolactic fermentation takes place. The young wine is then racked into new 300-liter barriques made from Allier oak, where it matured for 15 months at a constant temperature of 11° Celsius in our 700 year-old natural cellar. Prior to bottling the wine is assembled in large oak barrels. Thereafter it is bottled where it matures for several months.

Ageing potential: 2020

food accompany: A perfect match for venison dishes with flavourful sauces.
