The wine
Cabernet Sauvignon is also cultivated in the hot and nutrient-rich Spiegel vineyard. The wine is of a deep red color with a purple-ruby hues at the edge. A wine full of charming fruit with intense aromas in the nose and a sweet and soft palate lined with gentle, velvety tannins – a perfect cigar-wine.

Ried Spiegel
This southerly-exposed site with a generous layer of humus (up to 80 cm) underlaid with loess is very nutrient-rich. The profound soils allow the roots to grow long and deep, thereby allowing the vines to survive long dry periods without damage. They obtain their nutrients and minerals from different soil layers. Our most concentrated and complex Grüner Veltliner thrives here due to the type of soil. As the grapes absorb the components and expression of the terroir, they give wines of the highest aromatic concentration and complexity. Our red wines also come from this medium heavy soil; here, they obtain their deep, warm aroma and finesse.

The wine-making
The ripest and best Cabernet Sauvignon grapes were selectively hand-picked in the middle of October, thereafter destemmed and fermented for 10 to 12 days in special temperature-controlled stainless steel tanks at temperatures ranging from 25 to 28° Celsius. The free-run wine undergoes malolactic fermentation, after which it is racked into new 300-liter barriques made from Allier oak for a maturation period of 12 months at a constant temperature of 11° Celsius in our 700 year-old natural cellar. Prior to bottling the wine is assembled in large, partly more than 50-year-old oak barrels. Thereafter it is filled into bottles where it matures for several months.
