Riesling Zöbinger Heiligenstein Reserve 2005

The Wine
In late autumn just the very best – nearly botrytis-free – Riesling berries from the Heiligenstein in “Auslese”-quality are harvested very selectively by hand. This firm and dry Riesling is ageing according to its Reserve-quality for many months in an ideally temperated 700 year-old natural cellar at a constant temperature of 11° Celsius and is bottled in late summer.

Ried Zöbinger Heiligenstein
The Heiligenstein is one of the prime vineyard sites for Riesling in this wine region. It boasts a very rare geological formation, laden with reddish, eroded desert sandstone originating in the Permian period - 270 million years ago – with conglomerates made from volcanic material. The name “Heiligenstein” has a long history. The medieval name, “Hellenstein”, which refers to the “hellish-hot” sunshine on the south slope, was changed to today’s form by regional pronunciation.


The wine-making
TThe extremely ripe grapes were very selectively picked by hand in the end of October when they had reached a sugar level of 22° KMW (appr. 113° Oechsle) – with hardly any botrytized grapes included. The grapes were carefully brought to the press house in small crates so as to ensure that they were not damaged. After the whole clusters were gently pressed, the cleared juice was slowly fermented in stainless steel tanks. Following a period of maturation at the ideal temperature and humidity levels our 700 year-old natural cellar offers, the wine was bottled in late summer 2006.
