The Lamm Territory
The Lamm Vineyards lie to the southeast of the 'Heiligenstein' elevation. The deep-soiled loess and clay formation is traversed by volcanic rock with predominant silt deposits. The Gruene Veltliner vine enjoys the ideal conditions on these deep-soiled and manured terraces with their southerly aspect, to generate a particularly multilayered and expressive wine.
The development of the Wine
The grapes are harvested towards the end of October in small crates and subjected to several manual selections. A careful vinification process commences in the wine press house and the mash is left to stand for a dwell time of some 12 hours. The self-clarifying juice slowly ferments without temperature monitoring in 500 litre oak barrels by means of autochthonous self-produced yeast. After the tapping in the springtime, the expressive Gruene Veltliner matures on its fine yeast in the 700 year old natural cellar at a constant 11°C, before being bottled in the following September.
